1 3/4 cups all-purpose flour
1 cup packed brown sugar
2 1/2 t. baking powder
1/4 t. salt
1 egg
1 cup milk
2/3 cup peanut butter (I used crunchy)
2 t. vanilla extract
- Preheat oven to 350 and spray 12 muffin tins with nonstick spray.
- Combine dry ingredients in a bowl and set aside.
- Mix egg, milk, pb, vegetable oil and vanilla in a separate bowl until smooth
- Add wet ingredients to dry ingredients with a spatula. Do not overmix.
- Fill muffin cups to 2/3 full.
- Bake for 15 minutes or until toothpick comes out clean.
- Delicious served with your favorite jelly and a glass of cold milk!
These peanut butter muffins were super easy and could easy be further modified to give some variation. Yummy!
