Pumpkin Bread
3 1/2 cups sifted flour (note: I never sift my flour)
2 teaspoons soda
1 1/2 teaspoon salt
1 cup oil
4 eggs
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
1 teaspoon ground clove
3 cups sugar
2/3 cup water
3 cups pureed pumpkin
- Combine and mix all ingredients well.
- Pour into 2 loaf pans (I’ve also made muffins).
- Bake at 350-degrees for 1 hour.
Harvest Butter
1 stick butter, softened
1/2 cup honey
1 tablespoon ground cinnamon
1 tablespoon ground nutmeg
The kids love this, too. And pumpkin is full of disease-fighting nutrients!
