Mangia! Mangia!

The Peapod Squad, especially Snap Pea, LOVES spaghetti. That probably makes sense given their Italian heritage. Hubby is 1st-generation Italian-American. His parents immigrated here from Southern Italy. His mom (“Grandma”) is an amazing cook. Amazing.

My mom (“Nana”) has many talents. She is one of the most creative people I know. She’d be the first to admit, however, that cooking isn’t really her “thing.”

So you’d think the squad would prefer Grandma’s authentic Italian spaghetti, right?

Nope.

“Nana spaghetti” is without a doubt Snap’s very favorite food. He eats a TON of it when Nana makes it. He begs for it every time we visit. He has asked Nana to teach Grandma how to make it. Yes. He wants his all-American Nana to teach his 100% Italian Grandma how to make a quintessentially Italian dish.

Thankfully, Grandma has a great sense of humor and adores Snap. So rather than being offended by this ridiculousness, she laughs herself silly when Snap tells her she should “pwobabwy ask for Nana’s wecipe.”

And Nana? Well, she loves it. Why wouldn’t she? Especially when she sees Snap inhaling a big plate full of her signature “Nana spaghetti.”

How to Make Homemade Pop Tarts

My kids love pop tarts. The thing is…they are full of artificial colors, preservatives, high fructose corn syrup and other junk I’d rather limit around here. So I saw this on my friend, Kate’s, blog and knew I had to try it myself. You could either use the refrigerated pie crusts (they come 2 to a pack) or use my favorite pie crust recipe. The homemade crust is really simple, though. I promise.

Basically, you follow these simple steps.

  1. Roll out the dough on a lightly floured surface…making it pretty thin.
  2. Cut it into squares/rectangles (though you can do whatever shape you want, really).
  3. Put a big blob of jam/jelly/preserves (I LOVE Polaner all-fruit blueberry).
  4. Fold the crust over and seal with fingers or fork.
  5. Bake for 10-12 minutes at 425-degrees. They’ll smell heavenly!
  6. After they are cooled, mix 1 cup of powdered sugar with 3 T of milk for the glaze.
  7. The glaze will harden and you can either eat them now or freeze them for later.

So easy and so much better for my small people. I may have to make a bigger batch next time, though, because I’ve already eaten two while they’re at school. Oops!
