Mouthwater Monday: Peanut Butter Muffins

peanut butter muffins

1 3/4 cups all-purpose flour

1 cup packed brown sugar

2 1/2 t. baking powder

1/4 t. salt

1 egg

1 cup milk

2/3 cup peanut butter (I used crunchy)

2 t. vanilla extract

  • Preheat oven to 350 and spray 12 muffin tins with nonstick spray.
  • Combine dry ingredients in a bowl and set aside.
  • Mix egg, milk, pb, vegetable oil and vanilla in a separate bowl until smooth
  • Add wet ingredients to dry ingredients with a spatula. Do not overmix.
  • Fill muffin cups to 2/3 full.
  • Bake for 15 minutes or until toothpick comes out clean.
  • Delicious served with your favorite jelly and a glass of cold milk!

These peanut butter muffins were super easy and could easy be further modified to give some variation. Yummy!
